Kolkata Biryani
Ingredients
marination of chicken
- ½ kg chicken
- 1 tsp red chili powder
- 1 tsp coriander powder (dhania powder)
- salt to taste
- ½ tsp crushed cumin seeds (zeera koota hua)
- 1 tbsp whole spice (sabut garam masala)
- 1 tbsp biryani masala
- 1 tbsp ginger and garlic crushed into paste form
- 1 medium sized onion crushed into paste form
- 1 cup yogurt (dahi)
Other ingredients
- ½ cup oil for cooking
- 1 medium sized onion
- 2 medium sized potatoes
Chicken curry
- marinated chicken
- 5-6 soaked dried plum (bheegay huay aloo bhukhare)
Assembling and garnishing
- ½ kg boiled basmati rice
- biryani masala
- chicken curry
- fried potatoes
- some green chilies
- fried onion
- saffron threads soaked in 4tbsp milk
- few drops of kewra water
- a handful of fresh coriander leaves
- 2-3 boiled eggs or as required
