Kolkata Biryani

Servings 4 people


marination of chicken

  • ½ kg chicken
  • 1 tsp red chili powder
  • 1 tsp coriander powder (dhania powder)
  • salt to taste
  • ½ tsp crushed cumin seeds (zeera koota hua)
  • 1 tbsp whole spice (sabut garam masala)
  • 1 tbsp biryani masala
  • 1 tbsp ginger and garlic crushed into paste form
  • 1 medium sized onion crushed into paste form
  • 1 cup yogurt (dahi)

Other ingredients

  • ½ cup oil for cooking
  • 1 medium sized onion
  • 2 medium sized potatoes

Chicken curry

  • marinated chicken
  • 5-6 soaked dried plum (bheegay huay aloo bhukhare)

Assembling and garnishing

  • ½ kg boiled basmati rice
  • biryani masala
  • chicken curry
  • fried potatoes
  • some green chilies
  • fried onion
  • saffron threads soaked in 4tbsp milk
  • few drops of kewra water
  • a handful of fresh coriander leaves
  • 2-3 boiled eggs or as required
