Ingredients
  

Ingredients – Vegetable Marinating

  • ½ cup yogurt
  • 1 tsp coriander powder (dhaniya powderr)
  • ¼ tsp turmeric (haldi)
  • salt to taste
  • 1 tsp red chili powder
  • 1 tbsp homemade biryani masala
  • ½ tsp dried fenugreek (kasoori methi) optional
  • 1 carrot
  • 4 – 5 green chilies
  • 1 – 2 potatoes
  • ½ cup cauliflower (gobi) or quantity as required

Ingredients – Cooking

  • ½ cup cooking oil
  • 1 black cardamom (bari elaichi)
  • 1 bay leaf (taiz pata)
  • 4 – 5 black pepper corns (Kali mirchain)
  • ½ tsp cumin seeds (zeera)
  • ½ tsp black cumin seeds (shahi zeera)
  • 2 onions medium sized
  • tbsp ginger garlic (adrak lahsan)
  • 1 – 2 tomatoes
  • ¼ cup boiled green peas (ublay matar)
  • mint leaves
  • fresh coriander leaves
  • ½ kg boiled basmati rice (ublay basmati chawal)
  • tsp orang food color (zarda rang)
  • 2 – 3 drops biryani essence
  • green chilies
