Vegetable Dum Biryani
Ingredients
Ingredients – Vegetable Marinating
- ½ cup yogurt
- 1 tsp coriander powder (dhaniya powderr)
- ¼ tsp turmeric (haldi)
- salt to taste
- 1 tsp red chili powder
- 1 tbsp homemade biryani masala
- ½ tsp dried fenugreek (kasoori methi) optional
- 1 carrot
- 4 – 5 green chilies
- 1 – 2 potatoes
- ½ cup cauliflower (gobi) or quantity as required
Ingredients – Cooking
- ½ cup cooking oil
- 1 black cardamom (bari elaichi)
- 1 bay leaf (taiz pata)
- 4 – 5 black pepper corns (Kali mirchain)
- ½ tsp cumin seeds (zeera)
- ½ tsp black cumin seeds (shahi zeera)
- 2 onions medium sized
- 1½ tbsp ginger garlic (adrak lahsan)
- 1 – 2 tomatoes
- ¼ cup boiled green peas (ublay matar)
- mint leaves
- fresh coriander leaves
- ½ kg boiled basmati rice (ublay basmati chawal)
- ⅙ tsp orang food color (zarda rang)
- 2 – 3 drops biryani essence
- green chilies
