Crispy on the outside and soft on the inside. Cheesy Potato Croquette is a lovely side dish to flatter any meal. You can store them in an airtight container in the fridge for up to 3 to 5 days. Use plastic wrap to cover and refrigerate until ready to bake or fry.

Ingredients
- 3 medium sized potatoes cut into cubes
- 2 – 3 cups water
- 1 green chili
- some fresh coriander leaves chopped
- salt to taste
- ½ tsp mixed herbs
- ½ tsp white pepper or quantity to taste
- 2 tbsp corn flour
- mozzarella cheese as required
- 1 egg
- flour as required
- breadcrumbs as required
- oil for deep frying
