Mixed Vegetables Dish Recipe


  • ½ cup oil or as required
  • 1 onion medium sized
  • 2 potatoes large sized
  • 1 tbsp garlic
  • 1 carrot large sized
  • 1 tomato
  • 1 tsp coriander powder
  • 1 tsp red chili powder or to taste
  • ½ tsp cumin seeds crushed (koota hoa zeera)
  • ¼ tsp turmeric powder (haldi)
  • salt to taste
  • ½ tsp black pepper (crushed)
  • ½ cup green peas (boiled)
  • 1 capsicum (shimla mirch)
  • 4 – 5 green chilies
  • 1 tsp fenugreek leaves


  • Heat oil in a cooking pan and fry onion slices till light golden.
  • Next, add potato cubes and garlic paste. Stir fry for few minutes.
  • Add carrot slices and stir continuously for a minute.
  • Then, add blended tomato and the seasonings i.e., coriander powder, red chili powder, crushed cumin seeds , turmeric. powder and salt. Stir to mix.
  • Cook on low to medium flame till potato cubes become soft. Cover the pan with lid while cooking.
  • Now add boiled green peas, capsicum cubes and sliced green chilies.
  • Add dried fenugreek leaves to enhance the flavor and aroma. In the end you can get a slightly sweet and nutty flavor.
  • With the lid on, simmer for 5 minutes.
  • When ready serve it with joy.
