Heat oil in a cooking pan and fry onion slices till light golden.
Next, add potato cubes and garlic paste. Stir fry for few minutes.
Add carrot slices and stir continuously for a minute.
Then, add blended tomato and the seasonings i.e., coriander powder, red chili powder, crushed cumin seeds , turmeric. powder and salt. Stir to mix.
Cook on low to medium flame till potato cubes become soft. Cover the pan with lid while cooking.
Now add boiled green peas, capsicum cubes and sliced green chilies.
Add dried fenugreek leaves to enhance the flavor and aroma. In the end you can get a slightly sweet and nutty flavor.
With the lid on, simmer for 5 minutes.
When ready serve it with joy.
