Ingredients
  

  • ½ cup cornflour
  • ¼ cup rice flour
  • ½ tsp salt
  • ¼ tsp white pepper powder
  • 1 tbsp chicken powder
  • 4 potatoes
  • oil for deep frying
  • chat masala

Instructions
 

  • In a large bowl, mix together cornflour, rice flour, salt, white pepper powder, and chicken powder. This mixture will give the fries a unique flavour and a delightful crunch.
  • Peel off the potatoes and cut them into nice strips. Wash the potato strips in cold water to remove excess starch, which helps achieve crispier fries.
  • Toss the potato strips in the dry mixture until they are evenly coated.
  • Heat oil in a deep fryer or a deep pan to 375°F (190°C). The right temperature is crucial for that perfect crunch.
  • Fry the potatoes in batches, being careful not to overcrowd the pan. This ensures each fry cooks evenly.
  • Once the fries are golden brown and crispy, remove them from the oil and drain them on a paper towel.
  • While still hot, sprinkle the fries with chat masala for that extra kick of flavour. Chat masala is a spice mix commonly used in South Asian cuisine, known for its tangy and slightly spicy taste.
  • Serve hot and enjoy the perfect blend of Western and Eastern flavours.
