This is a delicious and easy sandwich that you can make at home with simple ingredients. Here’s what you’ll need:
Grill the Chicken Fillets
One of the most important steps in preparing a delicious Club Sandwich is to grill the chicken fillets properly. Grilling not only adds flavor and texture to the meat, but also helps to seal in the juices and prevent it from drying out. Here are some tips on how to grill chicken fillets like a pro:
- Choose thin and even fillets that cook quickly and evenly. If your fillets are too thick, you can pound them with a meat mallet or slice them horizontally to make them thinner.
- Season your fillets well with salt, pepper, herbs, spices, marinades or sauces of your choice. You can also brush some oil or butter on them to keep them moist and prevent sticking.
- Preheat your grill to medium-high heat and clean it with a wire brush or a damp cloth. You can also spray some cooking spray or oil on the grill grates to prevent sticking.
- Place your fillets on the grill and cook for about 4 to 6 minutes per side, depending on the thickness and doneness you prefer. You can use a meat thermometer to check the internal temperature, which should be at least 165°F for chicken.
- Flip your fillets only once with a spatula or tongs, and avoid piercing them with a fork or knife, as this will release the juices and make them dry.
- Transfer your fillets to a platter and let them rest for about 5 minutes before serving. This will allow the juices to redistribute and keep the meat tender and juicy.
Omellette
In a small bowl, whisk the eggs and water until well combined. Season with salt and pepper. Heat a nonstick skillet over medium-high heat and melt the butter. Swirl the pan to coat it evenly with the butter.
Pour the egg mixture into the pan and tilt the pan to spread it evenly. As the eggs start to set, use a spatula to lift the edges and let the uncooked eggs run underneath.
When the eggs are almost set, sprinkle your desired filling over half of the omelette. Carefully fold the other half over the filling and slide the omelette onto a plate.
Club Sandwich Sauce
If you love spicy sandwiches, you will love this easy and quick sauce recipe. All you need is mayonnaise, peri peri sauce (you can also use hot sauce, mustard paste, BBQ sauce, or any other sauce you like), squeeze lemon juice, chopped pickled jalapenos, a pinch of salt and a pinch of black pepper. Here are the steps to make this sauce:
- In a small bowl, whisk together 1/4 cup of mayonnaise and 2 tablespoons of peri peri sauce. Adjust the amount of sauce according to your taste and preference.
- Add 1 teaspoon of lemon juice and mix well.
- Stir in 2 tablespoons of chopped pickled jalapenos. You can also use fresh jalapenos if you like them more.
- Season with salt and pepper to taste.
This sauce is creamy, tangy, spicy, and flavorful. It will add a kick to any sandwich you make. You can store it in an airtight container in the refrigerator for up to a week. Try it today with this club sandwich recipe and let me know what you think!
Assembling the Club Sandwich
Finally, you need to assemble the sandwich. Toast the bread slices lightly and spread some butter on them. On one slice of bread, spread some sandwich sauce and top with grilled chicken, cheese slice, omelette, cucumber, tomato and lettuce. Cover with another slice of bread and repeat with the remaining ingredients. Cut into halves or quarters and enjoy your grilled chicken sandwich!

- 1 tbsp peri peri sauce
- 1 tsp mustard paste
- 1 tsp oyster sauce
- 1 tbsp vinegar
- 2 tbsp oil
- ½ tsp Black Pepper Powder
- ¼ tsp salt or to taste
- 350 grams chicken boneless
- 1 tbsp for grease grill pan
Omelette Ingredients
- 2 eggs
- pinch of salt
- pinch of black pepper
- 1 – 2 tbsp oil
Sandwich Sauce Ingredients
- ¾ cup mayonnaise
- 1 tbsp Peri Peri sauce or hot sauce
- 1 tbsp mustard paste
- 1 tbsp BBQ sauce
- 1 tsp lemon juice
- 1 tbsp pickled jalapenos chopped
- pich of salt
- pinch of black pepper
Assembling
- 9 slices of large sized fresh bread or as required.
- butter as required.

Instructions
- First, you need to marinate the chicken. Cut the chicken into thin slices and put them in a bowl. Add Peri Peri sauce, mustard paste, oyster sauce, vinegar, oil, black pepper and salt. Mix well and let it marinate for at least 1 to 2 hours.
- Next, you need to grill the chicken. Heat a grill pan over high heat and grease it with some oil. Place the chicken slices on the pan and cook for about 4 minutes per side or until golden and cooked through. Transfer to a plate and keep warm.
- Then, you need to make the omelette. In a small bowl, whisk the eggs with salt and black pepper. Heat some oil in a frying pan over medium-high heat and pour the egg mixture. Cook for a few minutes, flipping once, until set. Cut into small pieces and set aside.
- Now, you need to make the homemade sandwich sauce. In a small bowl, combine mayonnaise, peri peri sauce, mustard paste, BBQ sauce, lemon juice, pickled jalapenos, salt and black pepper. Mix well and taste for seasoning.
- Finally, you need to assemble the sandwich. Toast the bread slices lightly and spread some butter on them. On one slice of bread, spread some sandwich sauce and top with grilled chicken, cheese slice, omelette, cucumber, tomato and lettuce.
