Kofta Biryani

Ingredients
Ingredients for preparation of mixed masala
- 1 bay leaf (tej patta)
- 1 black cardamom (bari elaichi)
- 2 green cardamom (choti elaichi)
- ½ piece of cinnamon stick (darcheeni)
- 5-7 black pepper corns
- ½ tsp cumin seeds (zeera)
- 2 laung
Ingredients of Kofta
- ½ kg minced mutton or minced beef
- 1 large sized onion
- a handful of fresh coriander leaves (hara dhania)
- a handful of mint leaves
- a slice of bread soaked in little bit milk
- 1 tbsp ginger and garlic crushed into paste form
- 1 tbsp milk fat (doodh ki malai)
- 1 tsp coriander powder (dhania powder)
- 1 tsp red chili powder
- salt to taste
- already prepared masala (ingredients already mentioned)
- 2-3 green chilies
- 1 tsp coconut powder
- 1 tsp poppy seeds (khaskhas)
- oil for frying the kofta
gravy
- 3 medium sized onion
- 1½ tbsp ginger and garlic crushed into paste form
- 3 large tomatoes
- 3-4 green chilies
- 1 tbsp coriander powder (dhania powder)
- 1 tbsp red chili powder or to taste
- salt to taste
- 1½ birynai masala you can also use homemade biryani masala
- 250 grams yogurt (dahi)
- 1 cup water
Assembling
- fried kofta
- 6-8 dried plums (sookhay aloo bukharay)
- a handful of fresh coriander leaves
- a handful of mint leavels l
- 2-3 green chilies
- 2 boiled potatoes
- 1 kg boiled basmati rice (already cooked)
- ⅛ tsp orange food color
